  • 1/2 tsp salt
  • 1 cup canned pumpkin puree
  • 1/3 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1/4 cup cream cheese, softened
  • 2 tbsp heavy cream
  • 1/2 tsp vanilla extract
  • Whipped cream for topping
  • Optional: pinch of cinnamon or nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and sugar until fluffy. Add the egg and vanilla; mix well.
  3. Combine flour and salt in another bowl, then gradually add to the wet mixture until a soft dough forms. Chill in the refrigerator for 30 minutes.
  4. Scoop dough into balls and place on the prepared baking sheet, pressing lightly in the center to create wells.
  5. Bake for 10–12 minutes until edges are golden; cool completely on wire racks.
  6. For filling, beat cream cheese until smooth, then add pumpkin puree, brown sugar, spices, heavy cream, and vanilla; mix well.
  7. Fill cooled cookie wells with pumpkin filling and top with whipped cream.
