  • 2 ½ cups shredded chicken
  • ½ packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green chilies
  • 10 ounces diced tomatoes with green chilies (undrained)
  • 1 pound cubed Queso Blanco Velveeta

  1. Combine shredded chicken, taco seasoning, sour cream, cheddar cheese, and green chilies in a mixing bowl until well mixed.
  2. In a saucepan over medium-high heat, melt Velveeta queso along with the diced tomatoes until smooth.
  3. Lay tortillas flat and fill each with about ½ to ¾ cup of the chicken mixture; roll tightly.
  4. Arrange rolled tortillas in a greased casserole dish and pour the warm queso sauce over them.
  5. Bake at 350°F (175°C) for about 20–25 minutes until bubbly and heated through.
