  • 1 cup fresh or frozen raspberries
  • 1/4 cup sugar
  • 1 teaspoon lemon juice
  • 1/4 cup water
  • 16 ounces mascarpone cheese (at room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon freshly grated lemon zest (preferably Meyer lemons)
  • 1 cup whipping cream
  • 1/4 cup sugar
  • 2 packages Lady Fingers
  • 1 cup lemon curd
  • About 2 pints of raspberries for garnish

Instructions

  1. In a small saucepan, simmer raspberries with sugar, lemon juice, and water until broken down. Blend if desired and let cool.
  2. Whip cream with sugar until soft peaks form. Mix mascarpone with vanilla extract and lemon zest until smooth.
  3. Fold whipped cream into mascarpone mixture in two stages to maintain lightness.
  4. Layer half of the ladyfingers in an 8×8 inch dish, followed by half of the raspberry puree, mascarpone mixture, lemon curd, and fresh raspberries. Repeat layers.
  5. Refrigerate for at least 3 hours before serving.
