Tzatziki Chicken Salad is a vibrant and refreshing dish that brings the flavors of the Mediterranean to your table. Tender, juicy chicken is paired with a creamy tzatziki sauce made from Greek yogurt, crisp cucumbers, and fragrant herbs.   • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium cucumber, grated and excess moisture squeezed out
  • 1 cup plain Greek yogurt (full-fat preferred)
  • 2 tbsp fresh dill, chopped
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper in a baking dish. Bake for 25-30 minutes until cooked through (internal temperature of 165°F).
  2. While chicken bakes, mix grated cucumber, Greek yogurt, minced garlic, dill, lemon juice, olive oil, salt, and pepper in a bowl until well combined.
  3. Chill tzatziki sauce in the refrigerator for about 20 minutes.
  4. Shred or chop cooked chicken into bite-sized pieces.
  5. In a large bowl, combine shredded chicken with tzatziki sauce until evenly coated.
  6. Serve immediately or store in an airtight container in the fridge for up to three days.
