  • 3 golden beets
  • 6 carrots
  • olive oil
  • salt
  • burrata cheese
  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • 1 garlic clove, crushed
  • 1 teaspoon minced rosemary
  • salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the vegetables by scrubbing and cutting the beets and carrots.
  3. Toss the beets and carrots separately with olive oil and salt.
  4. Spread them on a sheet pan and roast for about 30 minutes until tender.
