  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 ounces pasta (such as spaghetti or penne)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the cherry tomatoes and place them on a baking sheet. Drizzle with olive oil, sprinkle with minced garlic, salt, pepper, and toss to combine.
  3. Roast in the oven for 20-25 minutes until soft and caramelized.
  4. Meanwhile, cook the pasta in salted water according to package instructions until al dente.
  5. In a mixing bowl, combine ricotta cheese, Parmesan cheese, chopped basil, and lemon juice.
  6. Reserve some pasta water before draining the pasta. Combine roasted tomatoes with pasta in the pot; add the ricotta mixture and toss until well combined. Adjust consistency with reserved pasta water as needed.
  7. Serve immediately garnished with extra basil or Parmesan.
