  • 2 kg Maris Piper potatoes
  • 5 tbsp olive oil
  • 4 sprigs fresh rosemary (or thyme as an alternative)
  • Salt to taste

Instructions

  1. Preheat the oven to 200C (390F).
  2. Peel and chop the potatoes into even-sized pieces.
  3. Boil the potatoes in salted water with rosemary for about 12 minutes until just tender.
  4. Heat olive oil in a baking dish in the oven until very hot.
  5. Drain the potatoes and shake them lightly in the pot to roughen their edges.
  6. Carefully add the potatoes to the hot baking dish and drizzle with remaining olive oil and salt.
  7. Roast for 45 minutes; turn gently and roast for another 45 minutes until golden brown and crispy.
