  • 200 g semolina (1 ¼ cups)
  • 100 g all-purpose flour (¾ cup)
  • 150 g sugar (¾ cup)
  • 2 large eggs
  • 120 ml whole milk (½ cup)
  • 100 g unsalted butter, melted (½ cup)
  • 1 tsp saffron threads
  • ¼ cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9-inch cake pan.
  2. In one bowl, mix semolina, flour, baking powder, cardamom, and cinnamon. In another bowl, whisk eggs, sugar, melted butter, milk, vanilla extract, and rosewater until smooth.
  3. Gradually combine dry ingredients with wet ingredients and pour into the prepared pan.
  4. Bake for about 25-30 minutes until golden brown.
  5. While baking, prepare the saffron syrup by boiling sugar, water, saffron threads, and lemon juice until slightly thickened.
  6. Pour warm syrup over the hot cake immediately after baking and let it soak for 10 minutes before garnishing with pistachios.
