  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 medium apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. For the crust, mix graham cracker crumbs, sugar, and melted butter; press into the pan and bake for 10 minutes.
  3. In a bowl, blend softened cream cheese and sugar until smooth; add eggs one at a time, then stir in vanilla extract and sour cream.
  4. Pour filling over the cooled crust and bake in a water bath for 55–65 minutes until slightly jiggly in center.
  5. Cool in the oven for 1 hour, then chill for at least 4 hours or overnight.
  6. For the topping, sauté diced apples in butter with brown sugar and spices until soft; let cool.
  7. Prepare salted caramel by melting sugar until amber, then add butter and heavy cream; stir in sea salt.
  8. Top chilled cheesecake with apples and drizzle with caramel before serving.
