  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 tsp sea salt (for caramel)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter; press into a springform pan.
  3. Bake the crust for 10 minutes; cool.
  4. Toss apples with brown sugar, cinnamon, and flour; layer over the cooled crust.
  5. Beat cream cheese with sugar until smooth; add eggs one at a time, then vanilla and sour cream.
  6. Pour cheesecake mixture over apples; bake for 60-70 minutes until almost set.
  7. Cool completely before refrigerating for at least 4 hours.
  8. For caramel sauce: melt sugar until amber; stir in butter and cream; add sea salt.
  9. Drizzle salted caramel over cheesecake before serving.
