  • 34 tablespoons ice water
  • 4 ounces unsalted butter, melted
  • 1/3 cup sugar
  • 1 tablespoon flour
  • 3/4 teaspoon kosher or sea salt
  • 1 teaspoon vanilla extract
  • 3/4 cup honey
  • 3 large eggs, at room temperature
  • 1/2 cup heavy cream or crème fraîche
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons bourbon or whiskey (optional)
  • Flaky sea salt, to finish

Instructions

  1. Prepare the Pie Crust: In a stand mixer, combine flour, sugar, and salt. Add chilled butter and mix until crumbly. Gradually add ice water until dough forms. Shape into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  2. Roll Out Dough: Roll out the chilled dough on a floured surface to about 14 inches round. Transfer to a pie plate and trim excess dough, crimping edges as desired. Chill again for 30 minutes.
  3. Make Filling: Preheat oven to 375°F (190°C). Whisk together melted butter, sugar, flour, salt, vanilla extract, and honey in one bowl; beat eggs separately then combine with the mixture along with heavy cream and whiskey if using.
  4. Assemble and Bake: Pour filling into crust and bake for 40-45 minutes until set and lightly browned. Cool completely before serving.
  5. Serve: Sprinkle flaky sea salt on top before slicing.
