  • 2½ cups chocolate sandwich cookie crumbs
  • 6 tablespoons unsalted butter (melted)
  • 32 ounces cream cheese (softened)
  • 1½ cups granulated sugar
  • 4 large eggs
  • 2¼ cups sweetened shredded coconut
  • 1 cup salted caramel sauce

Instructions

  1. Preheat your oven to 325°F (163°C). In a bowl, combine cookie crumbs, melted butter, and salt; press into a springform pan.
  2. Beat cream cheese until smooth, gradually add sugar, then mix in eggs one at a time. Stir in sour cream and heavy cream until well combined.
  3. Fold in shredded coconut. Pour half the filling onto the crust, drizzle with half the caramel sauce, add remaining filling.
  4. Place pan in a larger baking dish filled with boiling water halfway up the sides. Bake for approximately 100 minutes.
  5. Cool in the oven with door ajar for an hour before refrigerating for at least six hours or overnight.
