  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 1/2 cups milk (or half-and-half)
  • 1 cup pumpkin puree
  • 1 lb ground pork sausage
  • 4 cups spinach (roughly chopped)
  • 15 oz ricotta cheese
  • 1 large egg
  • 1 1/2 cups mozzarella cheese (freshly grated)
  • 9 no-boil lasagna noodles

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare an 8×8-inch or a 9×9-inch baking dish.
  2. In a saucepan, melt butter and whisk in flour; gradually add milk until smooth. Simmer until thickened, then stir in pumpkin, salt, pepper, and nutmeg.
  3. In a skillet, brown sausage; add shallot and garlic, cooking until fragrant. Mix in spinach until wilted, then combine with ricotta, egg, sage, mozzarella, and salt.
  4. Layer the bottom of the baking dish with sauce, then add noodles followed by filling mixture and more sauce. Repeat layers finishing with noodles topped with remaining sauce and mozzarella.
  5. Cover with foil and bake for 20 minutes; uncover and bake for another 20 minutes until golden.
