  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Fresh basil for garnish

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until combined.
  2. Form small meatballs (about 1 inch in diameter) and set aside.
  3. Heat olive oil in a large pot over medium heat. Brown meatballs in batches for about 5 minutes until golden, then remove.
  4. Sauté chopped onions in the same pot until translucent (3-4 minutes).
  5. Add chicken broth and bring to a boil. Reduce heat to simmer.
  6. Return browned meatballs to the pot and simmer for 15 minutes.
  7. Stir in heavy cream and spinach; cook until spinach wilts (around 2 minutes).
