  • 150 g shredded mozzarella cheese
  • 100 g sliced roasted red peppers
  • 100 g fresh spinach
  • 2 cloves garlic, minced
  • 2 tbsp olive oil (divided)
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Cut pockets into each chicken breast using a sharp knife.
  3. In a skillet, heat olive oil over medium heat; sauté garlic until fragrant, then add spinach until wilted.
  4. Stuff each chicken breast with roasted red peppers, spinach mixture, and mozzarella; secure with toothpicks.
  5. Brush with olive oil and season with Italian seasoning, paprika, salt, and pepper.
  6. Sear in an oven-safe skillet for 2-3 minutes on each side until golden brown.
  7. Transfer to the oven and bake for 20-25 minutes until cooked through.
