  • 2 tablespoons grated onion
  • 2 eggs
  • 1 tablespoon plain flour
  • ¼ teaspoon kosher salt
  • 2 tablespoons vegetable oil

  1. Peel and grate the sweet potato until you have approximately 3½ cups of shredded potato.
