  • 2 tablespoons oil (for frying, divided)
  • 28 ounces coleslaw mix (2 bags)
  • 1 cup edamame (thawed)
  • 1 tablespoon brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1/3 cup green onion (finely chopped)

Instructions

  1. Preheat a large skillet over medium heat and swirl in 1 tablespoon of oil. Cook the shrimp for about 3-4 minutes until opaque; transfer to a bowl.
  2. In the same skillet, add the remaining oil, onion, and garlic. Sauté for about 3-4 minutes until fragrant.
  3. Stir in coleslaw mix, brown sugar, soy sauce, and rice vinegar; cook for an additional 1-2 minutes.
  4. Add the cooked shrimp and edamame; stir-fry together for another 2-3 minutes until heated through.
  5. Garnish with chopped green onions before serving.
