  • 1 medium onion
  • 2 garlic cloves
  • 1 celery stalk
  • 1 carrot
  • 1 pound ground chuck beef
  • 2 14-ounce cans cherry tomatoes, crushed
  • 1/4 cup flat-leaf Italian parsley
  • 8 fresh basil leaves
  • Salt and freshly ground black pepper
  • 1/4 cup freshly grated Pecorino Romano
  • 1 lb of pasta (mezzi rigatoni or pappardelle)

Instructions

  1. In a large skillet, heat olive oil and sauté chopped onion and garlic over medium heat until soft.
  2. Add chopped celery and carrot; continue sautéing for 5 minutes.
  3. Increase heat to high and add ground beef, cooking until browned.
  4. Stir in crushed tomatoes, parsley, and basil; let simmer for about 30 minutes to thicken.
  5. Boil pasta according to package instructions; drain and combine with the sauce.
  6. Serve warm, topped with Pecorino Romano cheese and extra olive oil if desired.
