  • pound lean ground beef
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon pepper (or to taste)
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • ½ teaspoon red pepper flakes
  • 2 tablespoon Worcestershire sauce
  • 1.9 ounce onion soup mix
  • 1 cup beef broth (low sodium)
  • 2 cups frozen mixed vegetables (peas, carrots, green beans, corn)
  • 6 large potatoes, peeled and cubed
  • 4 tablespoon butter, softened
  • ½ cup milk
  • ¼ cup Parmesan cheese
  • ½ teaspoon white pepper (or to taste)
  • 1 tablespoon parsley, fresh, for garnish

Instructions

  1. 1. Boil water in a large pot; cook potato cubes for 15 minutes until fork-tender.
  2. 2. In a skillet, heat olive oil over medium heat; add ground beef, seasoning with salt and pepper. Cook until browned.
  3. 3. Stir in chopped onion and minced garlic; cook until onions are translucent.
  4. 4. Add red pepper flakes, Worcestershire sauce, onion soup mix, beef broth, and frozen veggies; stir and simmer until heated through.
  5. 5. Drain potatoes; mash with butter, milk, Parmesan cheese, salt, and white pepper until smooth.
