  • 3/4 cup graham crackers
  • 3 tablespoons unsalted butter, melted
  • 8 ounces reduced-fat cream cheese, softened
  • 3/4 cup plain 0% Greek yogurt
  • 2 large egg whites
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 12 teaspoons coconut extract
  • 1/3 cup sliced almonds
  • 1/3 cup shredded or flaked unsweetened coconut

Instructions

  1. Preheat oven to 350°F. Line an 8×8 baking dish with foil.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared baking dish and bake for 8-9 minutes until set.
  3. In another bowl, beat softened cream cheese until smooth. Add Greek yogurt, sugar, egg whites, flour, vanilla extract, and coconut extract; mix until fully combined.
  4. Pour the filling over the cooled crust. Bake for 20 minutes; cover with foil and bake an additional 5 minutes.
  5. Toast sliced almonds and shredded coconut in a pan over medium heat until golden.
  6. Allow bars to cool slightly before topping with toasted almond-coconut mixture. Chill in the fridge for at least 4 hours before slicing.
