  • 2 pounds PGI Welsh lamb (cubed)
  • 2 tablespoons vegetable oil
  • 2 onions (diced)
  • 2 leeks (finely diced)
  • 2 cups lamb stock
  • 3 large baking potatoes (thinly sliced)
  • 2 carrots (cubed)
  • 2 parsnips (peeled and diced)
  • salt to season
  • pepper to season
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon garlic paste or fresh minced garlic

Instructions

  1. Season the cubed lamb with salt and pepper. Heat vegetable oil in a large frying pan and brown the lamb in batches until nicely seared. Set aside.
  2. In the same pan, add butter and sauté the onions and leeks until softened.
  3. Stir in flour and a splash of stock to create a thick gravy base. Add Worcestershire sauce, tomato paste, garlic, and any desired sauces.
  4. Combine browned lamb and sautéed vegetables in the slow cooker. Pour in remaining stock with carrots, parsnips, and bay leaves.
  5. Layer the sliced potatoes over the top. Season with salt, pepper, and thyme before covering.
  6. Cook on HIGH for 7-8 hours or until the lamb is tender.
