  • 2 lbs boneless leg of lamb or lamb shoulder
  • 1 medium yellow onion
  • 4 cloves garlic
  • 1 ½ cups red wine or broth
  • 2 cups low-sodium beef broth
  • 1 lb baby Bella mushrooms
  • 1 ½ lbs red potatoes
  • 3 medium carrots
  • Fresh rosemary and parsley

Instructions

  1. Toss lamb pieces with sea salt, pepper, and flour.
  2. Brown the lamb in a large skillet over medium heat.
  3. Transfer the browned lamb to the slow cooker; add onion, garlic, red wine, beef broth, mushrooms, Worcestershire sauce, bay leaves, rosemary, potatoes, carrots, and celery.
  4. Cook on LOW for 7-8 hours or HIGH for 3-4 hours.
  5. In the last hour of cooking, stir in frozen peas. Garnish with parsley before serving.
