  • 2 pounds skinless, boneless chicken breasts
  • 2 pounds potatoes, cut into chunks
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika

Instructions

  1. In your slow cooker, combine potatoes with olive oil, salt, pepper, and paprika; stir.
  2. Place chicken on top of the seasoned potatoes and sprinkle with additional salt and pepper.
  3. Whisk together the Parmesan garlic sauce and water (or stock), then pour over chicken and potatoes.
  4. Cover and cook on High for 4 hours or Low for 6 hours until chicken is cooked through.
  5. During the last 20 minutes, add shredded mozzarella and grated Parmesan cheese to melt.
  6. Serve with fresh parsley sprinkled on top.
