  • 1 cup white onion slices
  • 1 tablespoon chopped fresh garlic
  • ½ red jalapeño pepper (sliced)
  • 3 slices fresh galangal (or ginger)
  • 1 stalk lemongrass (pounded and cut)
  • 10 lime leaves (optional)
  • 1 tablespoon red Thai curry paste
  • 4 cups chicken broth
  • 2 cans full-fat coconut milk
  • 1 pound chicken breasts (diced)
  • 8 ounces sliced white mushrooms
  • brown sugar
  • fish sauce
  • fresh lime juice

Instructions

  1. In a slow cooker, combine onion, garlic, jalapeño, galangal, lemongrass, lime leaves, curry paste, and chicken broth. Stir to mix well.
  2. Cover and cook on HIGH for 3 hours or LOW for 6 hours.
  3. After cooking, use a slotted spoon to remove solids from the liquid.
  4. Add coconut milk, diced chicken, and mushrooms. Mix well.
  5. Cover again and cook on HIGH for an additional hour or LOW for about two hours until the chicken is fully cooked.
  6. Adjust seasoning by adding brown sugar, fish sauce, and lime juice to taste.
  7. Serve hot, garnished with green onions and cilantro.
