  • 2 ½ Yukon Gold potatoes (peeled and quartered)

  • 2 cups finely grated smoked Gouda

  • ½ to ¾ cup warm heavy cream (or half and half)

Instructions

  1. Place the peeled and quartered Yukon Gold potatoes in a large pot. Cover with cold water and add salt.
  2. Bring to a boil over medium-high heat, then reduce heat slightly and cook until tender (about 15 minutes). Drain the potatoes.
  3. Rice the drained potatoes back into the pot using a potato ricer.
  4. Stir in the sliced butter until melted.
  5. Add smoked Gouda, sour cream, and ⅓ cup of warm heavy cream; mix until creamy and smooth. Adjust consistency by adding more cream if needed.
  6. Taste and adjust seasoning before serving warm.
