Sourdough Monkey Bread is a delightful, gooey treat that’s sure to capture your heart and taste buds! This pull-apart bread combines the tangy flavor of sourdough with sweet cinnamon and brown sugar, creating a comforting dessert or breakfast option.

Ingredients

  • 200 g filtered water
  • 85 g active sourdough starter
  • 70 g cane sugar
  • 1 large egg
  • 8 g sea salt
  • 430 g bread flour
  • 8 tbsp unsalted butter
  • 1 cup brown sugar
  • ½ tsp ground cinnamon
  • ½ cup powdered sugar (for glaze)
  • 1 tbsp whole milk (for glaze)

Instructions

  1. In a mixing bowl, combine filtered water and sourdough starter. Add cane sugar, egg, sea salt, and bread flour; mix until dough forms.
  2. Knead on a floured surface for about 10 minutes until smooth. Place in an oiled bowl, cover with plastic wrap, and let rise for several hours or overnight.
  3. Preheat oven to 350°F (175°C). Punch down dough and divide into golf ball-sized pieces.
  4. Melt butter and combine brown sugar with cinnamon in a separate bowl. Dip each dough ball in butter, then roll in the sugar mixture.
  5. Layer coated dough balls in a prepared baking pan snugly.
  6. Bake for approximately 35 minutes or until golden brown. Let cool slightly before inverting onto a plate.
  7. For the glaze, mix powdered sugar with milk until smooth and drizzle over warm monkey bread.
