  • 1/2 cup vegetable oil
  • 1/2 cup sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease either three mini loaf pans or one large loaf pan.
  2. In a medium mixing bowl, combine diced peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract. Mix until well blended.
  3. In another bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add dry ingredients to wet mixture and stir gently until just combined.
  4. Pour the batter into prepared pans evenly and smooth it out.
  5. Bake mini loaves for 25-30 minutes or a large loaf for 50-55 minutes. Check doneness with a toothpick; it should come out clean.
