  • 1 whole chicken
  • 3 tbsp grapeseed oil
  • 6 tbsp unsalted butter
  • 3 tbsp all-purpose seasoning
  • 1½ tbsp black pepper
  • 2 tbsp smoked paprika
  • Fresh thyme sprigs
  • Garlic cloves
  • Onion

Instructions

  1. Clean and pat dry the chicken. Cut along both sides of the backbone with kitchen scissors or a knife to remove it.
  2. Press down on the chicken to flatten it and pat dry again. Drizzle with 1 tablespoon of grapeseed oil and coat with seasoning.
  3. Flip the chicken breast side up, drizzle with remaining oil, and massage in seasoning.
  4. Gently separate the skin from each breast, adding butter under the skin along with any leftover seasoning.
  5. Sprinkle thyme leaves over the chicken for extra flavor.
  6. Arrange onion slices in a cast iron skillet and place the chicken on top.
  7. Preheat oven to 375°F (190°C) and bake for about 1 hour and 15 minutes, basting every 15 minutes until cooked through.
