  • 120 mL warm milk (½ cup)
  • 56 g unsalted butter (4 tbsp, melted)
  • 2 large eggs
  • 15 mL vanilla extract (1 tbsp)
  • 60 mL honey (¼ cup)
  • 425 g all-purpose flour (3 ⅓ cups)
  • 170 g bittersweet chocolate chips
  • Spices: cinnamon and cardamom

Instructions

  1. Prepare the Tangzhong by mixing warm milk with flour over low heat until thickened. Let cool.
  2. Activate yeast by combining warm milk with active dry yeast in a bowl; let sit until bubbly.
  3. Mix in melted butter, eggs, vanilla, sugar, cinnamon, cardamom, and the cooled Tangzhong.
  4. Gradually stir in flour and salt until combined; knead until smooth.
  5. Allow dough to rise until doubled in size.
  6. Shape the dough into balls and let them rise again on a baking sheet.
  7. Bake at 180°C (350°F) for 25-30 minutes until golden brown.
  8. Glaze with confectioner’s sugar mixed with water after baking.
