  • 12 tablespoons chili paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken by mixing chicken thighs with coconut milk, olive oil, onion, garlic, ginger, chili paste, cumin, paprika, salt, and pepper in a large bowl. Cover and refrigerate for at least 1 hour or overnight.
  2. Preheat your oven to 375°F (190°C).
  3. Transfer marinated chicken and all marinade into a baking dish in a single layer.
  4. Bake for 35-40 minutes or until the internal temperature reaches 165°F (74°C).
  5. Let rest for 5 minutes before serving. Squeeze lime juice over the top and garnish with cilantro.
