  • 1 medium onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 3 cloves garlic, minced
  • 14 ounces unsweetened coconut milk
  • 1 teaspoon cumin (ground)
  • 1 teaspoon cayenne pepper
  • 1 teaspoon turmeric
  • 1 teaspoon coriander (ground)
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper (or to taste)
  • 3 medium tomatoes, chopped small
  • 2 tablespoon lemon juice (freshly squeezed)
  • 2 tablespoon parsley (fresh, chopped or cilantro)

Instructions

  1. In a large bowl, mix cumin, cayenne pepper, turmeric, coriander, garlic powder, salt, and pepper.
  2. Coat chicken breasts in the spice mixture thoroughly.
  3. Heat oil in a skillet over medium heat; cook the chicken for about 6-8 minutes on each side until browned and cooked through.
  4. Remove chicken and sauté onions, jalapeno, ginger, and garlic in the same skillet until softened.
  5. Add tomatoes and lemon juice; cook until tomatoes soften.
  6. Stir in coconut milk; simmer until the sauce thickens.
  7. Return chicken to the skillet; let it simmer in the sauce for an additional 5 minutes.
  8. Garnish with fresh herbs before serving.
