  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 1 tablespoon Cajun seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded pepper jack cheese

Instructions

  1. Cook penne pasta in boiling salted water until al dente; drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil. Add diced chicken seasoned with Cajun spices and cook until browned (about 5-7 minutes). Remove from skillet.
  3. In the same skillet, sauté onion and bell pepper for about 3-4 minutes. Add garlic and cook for an additional minute.
  4. Pour in chicken broth, bring to a simmer, then stir in heavy cream and simmer for 2-3 minutes until slightly thickened.
  5. Reduce heat to low; add cooked chicken and penne to the skillet. Mix in shredded pepper jack cheese until melted.
  6. Serve garnished with sliced green onions and chopped parsley.
