  • 2 chicken breasts (skinless and boneless)
  • 12 oz penne pasta
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp chipotle peppers in adobo sauce
  • 2 small red and yellow bell peppers
  • 1 cup asparagus
  • 3 cloves garlic

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat avocado oil and cook seasoned chicken breasts until golden brown and cooked through. Slice thinly.
  3. Sauté diced onion, garlic, bell peppers, asparagus, and peas in the same skillet until tender.
