  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream (or half low-fat milk)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion for about 5 minutes until softened.
  2. Add minced garlic and diced jalapeños; cook for an additional 2 minutes.
  3. Place chicken breasts into the pot with chicken broth. Boil, then reduce heat and simmer for 15 minutes.
  4. Remove chicken from the pot, shred it using two forks, and return it to the pot.
  5. Stir in heavy cream, cumin, paprika, salt, and pepper until combined.
  6. Mix in cream cheese until smooth, then add shredded cheddar until melted.
  7. Allow soup to simmer for another 5 minutes before serving.
