  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon (optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until softened.
  2. Add minced garlic and diced jalapeños; cook for an additional 2 minutes.
  3. Incorporate chicken breasts and chicken broth; bring to a boil. Simmer for 15 minutes until chicken is cooked.
  4. Remove chicken, shred it, and return to the pot.
  5. Stir in heavy cream, ground cumin, paprika, salt, and pepper.
  6. Mix in softened cream cheese until well combined.
  7. Add shredded cheddar cheese until melted.
  8. Let simmer for an additional 5 minutes before serving hot with cilantro garnish.
