  • 1 kg carrots (peeled and sliced)
  • 1 medium onion (cut into eighths)
  • 4 cloves garlic (smashed)
  • 3 cm fresh ginger (thinly sliced)
  • 1 red chili (roughly chopped)
  • 3 tbsp miso paste
  • 1.6 L vegetable stock
  • Vegetable oil (for roasting)
  • Toppings: sliced spring onions, fresh ginger matchsticks, mixed seeds, crispy carrot peels

Instructions

  1. Preheat the oven to 200°C/180°C fan.
  2. Prepare vegetables: peel & slice carrots; cut onion & garlic; chop chili & ginger.
  3. Roast carrot peels with salt and pepper for about 10 minutes until crisp.
  4. In a large roasting tin, toss main vegetables with oil and seasonings; roast for about 35 minutes until tender.
  5. For chili ginger oil: heat vegetable oil in a saucepan, add ginger & chili, then mixed seeds; cook briefly.
  6. Blend roasted vegetables with miso paste and vegetable stock until smooth.
  7. Simmer blended soup for five minutes; adjust seasoning to taste.
  8. Serve topped with crispy peels and chili ginger oil.
