  • 1 large egg
  • 1 tablespoon olive oil
  • ½ teaspoon dried dill
  • 2 cups fresh spinach (chopped and packed)
  • ¾ cup crumbled feta
  • 2 teaspoons bacon bits
  • Salt and pepper to taste
  • 1 sheet frozen puff pastry (thawed)
  • 1 tablespoon butter (melted)

Instructions

  1. Preheat the oven to 400°F. Spray nine cups in a muffin pan with cooking spray.
  2. In a microwave-safe container, soften cream cheese by microwaving it in 10-second increments until pliable. Mix in the egg, olive oil, and dill.
  3. In a separate bowl, combine spinach, feta, and bacon bits; then blend in the cream cheese mixture and season with salt and pepper.
  4. Cut puff pastry into nine squares. Press each square into the muffin pan cups and fill with the spinach mixture. Bring the corners of the pastry together over the filling and brush with melted butter.
