Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs
  • 4 tablespoons unsalted butter
  • 1/4 cup honey
  • 4 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground ginger
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Rinse the jasmine rice under cold water until clear.
  2. In a medium saucepan, combine rinsed rice and chicken broth; bring to a boil, then reduce heat to low and simmer for 15 minutes. Let sit covered for an additional 5 minutes.
  3. Season the chicken thighs with salt and pepper. In a skillet over medium heat, melt 2 tablespoons of butter and cook the chicken for about 6–7 minutes per side until golden brown; set aside.
  4. In the same skillet, melt the remaining butter, add minced garlic and ginger, cooking until fragrant. Stir in honey, soy sauce, and apple cider vinegar; simmer.
  5. Return chicken to the skillet, coating it in the sauce for an additional 2–3 minutes until thickened.
  6. Serve the sticky chicken over fluffed rice and garnish with sliced green onions and sesame seeds.
