  • 1 cup water
  • 2 cups heavy cream
  • ½ cup dark brown sugar
  • 2½ tablespoons golden syrup (or molasses)
  • Pinch salt
  • 1 teaspoon baking soda
  • 1¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 4 tablespoons unsalted butter
  • ¾ cup granulated sugar
  • 2 eggs (at room temperature)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and butter an 8½-inch soufflé dish.
  2. In a saucepan, combine heavy cream, dark brown sugar, golden syrup (or molasses), and a pinch of salt. Boil while stirring, then simmer for 5 minutes until thickened. Reserve half for serving and pour the other half into the prepared dish.
  3. Heat chopped dates with water until boiling. Stir in baking soda and set aside.
  4. Whisk together flour, baking powder, and salt in a bowl.
  5. Cream butter and sugar until fluffy; add eggs one at a time followed by vanilla extract.
  6. Combine the flour mixture with the butter mixture and fold in the date mixture.
  7. Pour batter into the soufflé dish and bake for about 50 minutes, or until a toothpick comes out with moist crumbs attached.
  8. Allow to cool slightly before serving with warm toffee sauce.
