  • 1 cup vanilla yogurt
  • 1 tablespoon honey
  • 2 eggs (for custard)
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 3 eggs (for lemon curd)
  • 1/2 cup lemon juice
  • 1 cup sugar
  • 1/4 cup lemon zest (about 2 lemons)
  • 6 tablespoons unsalted butter, cubed
  • Pinch of coarse salt

Instructions

  1. To make the crust, combine flour, salt, and sugar in a food processor. Add butter and pulse until crumbly. Gradually add cold water until dough forms; chill for 30 minutes.
  2. Preheat the oven to 375°F (190°C). Roll out the dough and fit it into tart pans. Bake for about 20 minutes until golden brown.
  3. For the custard filling, mix yogurt, honey, eggs, sugar, and vanilla extract until smooth. Pour into cooled crusts and bake for another 20 minutes.
  4. For lemon curd, whisk eggs, lemon juice, sugar, zest, butter, and salt in a saucepan over medium heat until thickened.
  5. Once cooled completely, top each tart with fresh strawberries and drizzle with lemon curd.
