  • 3 eggs
  • 1/2 cup lemon juice
  • 1 cup sugar
  • 1/4 cup lemon zest (about 2 lemons)
  • 6 tablespoons unsalted butter, cubed
  • Pinch of coarse salt

Instructions

  1. Preheat oven to 375°F (190°C). In a food processor, blend flour, sea salt, and sugar. Add butter until crumbly. Gradually mix in cold water to form dough.
  2. Roll out dough into tart pans and prick the base with a fork. Bake for about 20 minutes until golden; let cool.
  3. Whisk yogurt, honey, eggs, sugar, and vanilla in a bowl until smooth. Gently fold in strawberries and pour into cooled crusts.
  4. Bake tarts for another 20 minutes until set.
  5. For the lemon curd, whisk eggs, lemon juice, zest, and sugar over low heat until thickened (about 10 minutes), then stir in butter.
  6. Once tarts are cooled, drizzle with lemon curd before serving.
