  • 1 cup sugar

  • 1 cup diced strawberries (about 1 1/4 cups whole)
  • 1/2 cup smashed strawberries (about 1 cup whole)
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F. Grease an 8 or 9-inch loaf pan.
  2. In a medium bowl, combine flour, baking powder, and salt.
  3. In a large bowl, mix Greek yogurt, sugar, eggs, almond extract, and vegetable oil until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Gently fold in diced strawberries and pour batter into the prepared pan.
  6. Bake for about 50 minutes until the center is set.
  7. Allow the cake to cool for about 10 minutes before transferring to a cooling rack.
  8. For the glaze, mix smashed strawberries with powdered sugar and drizzle over the cooled cake.
