  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Prepare the strawberry sauce by cooking strawberries, sugar, and lemon juice in a saucepan until softened. Puree and thicken with cornstarch slurry; cool completely.
  2. Preheat oven to 325°F (160°C).
  3. Make the crust by mixing graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake for about 8-10 minutes; set aside to cool.
  4. In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla extract, sour cream, and heavy cream until combined.
  5. Pour cheesecake filling into the crust, swirl in cooled strawberry sauce for a marbled effect.
  6. Bake in a water bath for about 55-65 minutes until edges are set.
  7. Cool gradually in the oven for an hour before refrigerating for at least six hours or overnight.
