  • ¼ cup granulated sugar (plus extra for crust)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with water
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 24 ounces cream cheese (softened)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Prepare strawberry sauce by cooking strawberries, sugar, and lemon juice until soft. Mash into a puree and thicken with cornstarch slurry.
  2. Preheat oven to 325°F (160°C).
  3. Mix graham cracker crumbs, sugar, and melted butter; press into the springform pan to form the crust. Bake for 8-10 minutes.
  4. Beat cream cheese and sugar until smooth; add eggs one at a time, then mix in vanilla, sour cream, and heavy cream.
  5. Pour filling over crust and swirl in cooled strawberry sauce.
  6. Bake in a water bath for 55-65 minutes until edges are set but center jiggles slightly.
  7. Cool gradually in the oven before refrigerating for at least six hours.
