  • 1 pound ground beef
  • 1 cup diced onion
  • ½ tablespoon minced garlic
  • 2 cups diced bell peppers (red, orange, or yellow)
  • 14.5 oz can petite diced tomatoes
  • 15 oz can tomato sauce
  • 3 cups water
  • 2 cups low sodium beef broth
  • ⅔ cup long grain white rice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned; drain excess fat.
  2. Stir in diced onion and minced garlic; cook until onions are translucent (about 3-4 minutes).
  3. Add diced bell peppers, petite diced tomatoes, tomato sauce, water, beef broth, and all seasonings; stir well.
  4. Bring the mixture to a boil, then reduce heat to low and add rice. Cover and let simmer for about 30 minutes until rice is tender.
  5. Remove bay leaf before serving; ladle into bowls and enjoy hot.
