  • 1/2 cup unsalted butter (room temperature)
  • 1 cup all-purpose flour (divided)
  • 1/4 cup powdered sugar
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 tbsp lemon zest
  • 3 large eggs (room temperature)
  • 1 1/2 cups granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. For the crust, beat together the butter, 1 cup of flour, and powdered sugar until combined. Press into the bottom of a greased 8" x 8" baking pan and bake for about 15 minutes or until lightly golden.
  3. In a separate bowl, whisk together lemon juice, lemon zest, eggs, and granulated sugar until smooth. Gradually incorporate the sifted remaining flour.
  4. Pour the lemon filling over the baked crust and return to the oven for an additional 30–35 minutes until set but slightly jiggly in the center.
  5. Cool completely on a wire rack before dusting with powdered sugar and slicing.
