  • 2 lbs beef (sirloin or flank steak)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried rosemary or thyme
  • Salt and pepper to taste

Instructions

  1. Marinate the beef by whisking together honey, soy sauce, garlic, ginger, black pepper, and salt in a bowl. Coat the beef well and let it marinate for at least 1 hour.
  2. Preheat the oven to 400°F (200°C).
  3. In another bowl, toss halved potatoes with olive oil, rosemary or thyme, salt, and pepper until evenly coated.
  4. Spread marinated beef on a baking sheet and arrange seasoned potatoes around it. Roast for 30-35 minutes, stirring potatoes halfway through.
  5. Allow the beef to rest for 5-10 minutes before slicing and serve alongside roasted potatoes drizzled with juices.
