  • 4 to 6 medium Russet potatoes
  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • Shredded lettuce
  • Cheddar cheese
  • Sour cream
  • Salsa
  • Guacamole (optional)
  • Green onion (optional)

Instructions

  1. Preheat oven to 400°F. Wash and dry potatoes, then poke holes in each one. Wrap in aluminum foil.
  2. Place wrapped potatoes on a baking sheet and bake for about 1 hour until tender.
  3. In a skillet over medium-high heat, brown ground beef; drain excess grease. Add taco seasoning and water as per packet instructions; simmer until thickened.
  4. Remove foil from potatoes, slice open each one, and fill generously with ground beef mixture. Top with your choice of lettuce, cheese, sour cream, salsa, guacamole, and green onions.
