  • 3 medium shallots

  • 1 lemon (zested and juiced)
  • 16 ounces frozen peas
  • 1 pear
  • ½ cup parsley

  1. Peel, slice, and dice the pear, tossing it with lemon juice to prevent browning; set aside.
  2. In a large skillet over medium heat, cook diced pancetta until golden brown (5-7 minutes). Use a slotted spoon to transfer it to a paper towel-lined plate, leaving some fat in the skillet.
  3. Add sliced shallots to the skillet and cook for about one minute. Stir in Dijon mustard.
  4. Add frozen peas and diced pears; stir until heated through (about 5 minutes).
  5. Remove from heat and mix in half of the cooked pancetta along with parsley and black pepper.
