  • 2 1/4 lbs Granny Smith apples (about 67 apples, peeled and sliced)
  • 1 1/2 tsp cinnamon
  • 8 Tbsp unsalted butter
  • 3 Tbsp all-purpose flour
  • 1/4 cup water
  • 1 cup granulated sugar
  • 1 egg (plus 1 Tbsp water for egg wash)

Instructions

  1. Prepare the double pie crust according to your favorite recipe, then chill it while you prepare the apple filling. Preheat the oven to 425°F.
  2. In a medium saucepan, melt the butter over medium heat. Whisk in flour and simmer for one minute. Add water and sugar; bring to a boil and simmer for three minutes before removing from heat.
  3. Peel, core, and slice the apples into a large bowl. Sprinkle with cinnamon and mix well. Pour the butter mixture over the apples and gently stir until coated.
  4. Roll out the bottom crust to fit your pie plate (9-inch). Transfer to the plate, fill with apple mixture, mounding slightly in the center.
  5. Roll out the top crust and cut into strips for a lattice design. Arrange on top of the filling and brush with egg wash.
  6. Bake at 425°F for 15 minutes; reduce temperature to 350°F and bake for an additional 45 minutes or until bubbly.
